The extraction of Ardore takes place cold and with continuous cycle, a few hours after collection. The result is an extra virgin olive oil of superior category monovarietal Coratina. Filtered oil.
Olfactory analysis: very intense, excellent quality, hints of fresh fruit (cut grass, artichoke, almond), bitter and spicy taste, strong and decided; persistent finish in the mouth.
Suggested food matchings: legumes, soups, red meat, bruschette. The use of this oil is decisive, it adds flavor, aroma and complexity to the dish.
